Mason Jar Banana Berry Parfait and Homemade Granola

Mornings at my house can be hectic, which is why I love this make-ahead breakfast. It’s a quick, healthy way to fuel the start of your day. Added bonus? It’s delicious! – Smári

 

 

 

 

 

 

 

 

 

 

 

Mason Jar Banana Berry Parfait

Serves 1

 

1 16 oz (473 ml) mason jar with a lid

6 oz (170 g) of your favorite flavor of Smári yogurt

1/2 medium (approx. 75 g) banana, cut into 1/4 inch slices

1/2 cup (approx. 60 g) fresh berries

4 tablespoons (35 g) + 1 teaspoon (5 g) homemade granola (recipe follows)

 

Preparation:

Place 2 oz. of yogurt in the bottom of the mason jar followed by half of the banana slices and half of the berries.

Top the fruit with 2 tablespoons of granola. Repeat once again ending with a third and final layer of yogurt.

Top with 1 teaspoon of granola. Place the lid on and refrigerate until ready to eat.

Homemade Granola

Makes approximately 3 cups

 

2 cups (180 g) rolled oats or any rolled grain (not instant)

2 tablespoons (28 g) light brown sugar, packed

1/4 teaspoon ground cinnamon

1/4 teaspoon salt

2 tablespoons (42 g) honey

3 tablespoons (45 ml) vegetable oil

1/4 teaspoon (1.2 ml) vanilla extract

1/2 cup (65 g) dried apricots, chopped into 1/4 inch pieces

1/4 cup seeds or nuts toasted and coarsely chopped

 

Preparation:

Heat the oven to 300°f.

Place the oats, brown sugar, cinnamon, and salt in a large bowl. Stir to combine and set aside.

Place the honey, oil, and vanilla in a small bowl and whisk to combine.

Pour honey mixture into oat mixture and stir until evenly coated. Spread the mixture out in a thin, even layer onto a baking sheet. Bake on the middle rack for 15 minutes.

Pull tray out of the oven, stir, and put back for 5-10 minutes longer until lightly golden brown. Place the sheet tray on a cooling rack. The granola will harden as it cools. Stir occasionally until completely cool. Add the dried apricots and nuts or seeds and stir to combine. Store airtight for up to two weeks.
